Everyone is learning to cook

Borders and Amazon both report double digit increases in cookbook sales, particularly comfort foods. While other magazines are failing, Bon Appetit magazine reports that its had a 39% increase in sales this year. It seems like people are staying in and learning to cook instead of relying on the easier (and usually more expensive) option of eating out.

Currently at Amazon you can find these books on the best sellers list:

Valentine’s Day Treats

While chocolates are the traditional Valentine’s Day gift, why not put a little bit more love and effort into your sweet Valentine’s Day offerings?

Red Velvet Cookie Sandwiches

Ingredients:
* 1 box red velvet cake mix
* 1 cup butter, divided (softened to room temperature)
* 2 eggs
* 1 8 oz. package cream cheese (softened to room temperature)
* 1 1lb. box of confectioner’s sugar
* 1 tsp vanilla

Directions:
For the cookies: Preheat oven to 350 degrees.

Mix cake mix, ½ cup butter and 2 eggs until combined.

Drop spoonfuls of cookie batter onto baking sheet about two inches apart.

Bake for 10-12 minutes. Cool.

For the cream cheese filling: In a mixer, cream the remaining ½ cup butter, cream cheese and vanilla.

Gradually add sugar and mix until smooth.

To assemble: Spoon a small amount of frosting on the flat side of one cookie. Take another cookie and press together until frosting is flush with the edge.

Raspberry Chocolate Heart Tart

Ingredients

* 1 purchased refrigerated pie pastry for 9-inch pie
* 1 cup (6 ounces) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
* 2/3 cup NESTLÉ® CARNATION® Sweetened Condensed Milk
* 2 teaspoons vanilla extract
* 2 cups raspberries, rinsed and dried
* Sifted powdered sugar

Cooking Instructions

1. Place pastry circle with plastic removed on lightly floured surface; roll out slightly. Trim small amount of pastry away to form heart shape. Place heart on ungreased baking sheet. Turn edges under 1/2 inch; flute. Prick pastry with tines of fork.

2. Bake in preheated 425 degree F oven for 10 to 12 minutes or until golden brown. Cool completely on baking sheet on wire rack.

3. Microwave morsels and sweetened condensed milk in medium, microwave-safe bowl on HIGH (100%) power for 1 minute; stir. Microwave at additional 10-second intervals, stirring until smooth. Stir in vanilla extract. Spread over crust. Refrigerate for a few minutes or until chocolate is set.

4. Arrange raspberries over chocolate; sprinkle with powdered sugar.

“My” Sea Salt

Awhile back I received the Tuscan blend of Sarah’s Sea Salt as a gift from my mom. The stuff smells amazing and tastes even better! I wasn’t exactly sure what to use it on, but recently sprinkled it over some zucchini brushed with olive oil, and grilled it. The zucchini tasted incredible with this blend of sea salt and Italian flavors like rosemary and lemon. Now that grilling season is here, I highly recommend picking up a canister of this herb and spice blend and using it on some of your own veggies. Summer Fun Cupcakes

Summer is here! The end of the school year, vacations, the beach, parties and fun in the sun! Here is a video that shows a great and easy cupcake for your summer party! The kids are sure to love it and it would be a hit at any summer time party! I am planning to make some for my kids when we are on our annual Maine beach vacation! It is even simple enough that you can let the kids help out and decorate them too!

Ronco Rotisserie Oven

Remember the Ron Popeil informercial with the phrase “set it and forget it!” well I do. I remember this neat gadget he created that for non cooks like me, looked like the easiest way to make something fancy without like the huge ordeal of “cooking” ..so I’ve always wanted the Ronco Rotisserie Oven because of the nice way it cooks things but it always makes the food look so good as it rotates! This reviewer can show you how it works!
